Pineapple Sheet Cake

Pineapple Sheet Cake
2 c. flour
2 c. sugar
1 tsp. vanilla
2 eggs, beaten
2 tsp. baking soda
1 (15 1/2 oz.) can crushed pineapple, with juice
1 (8 oz.) package cream cheese
1 c. brown sugar
4 tbsp. shortening
Mix flour, sugar, vanilla, eggs, baking soda, and pineapple (including juice) in a large bowl. Pour into a
greased and floured 13x9x2-inch baking dish. Bake at 325 degrees for 30 to 35 minutes.
For icing, beat cream cheese, brown sugar, and shortening with mixer until smooth. Spread on cake as soon
as it’s removed from the oven.
